Deep ruby color. Aromatics of red, blue, and black fruits. Red and ripe dark cherry, blueberry, black currant, plum, mocha, black tea, and exotic spice. Medium body with supportive structure from the fine tannins. Complex elegance, with both restrained power and a supple, fine finish.
PLACE Mostly from the west side of Paso Robles-Willow Creek, Templeton Gap, and small amounts of a few other AVAs to add intrigue and complexity to this 100% Cabernet Sauvignon. The complexity is achieved through blending of different geographical areas, not varietals, in this wine.
WINEMAKING DETAILS • Grapes picked ripe at 24 brix • Partially destemmed directly to tank • 48-hour cold soak-3 pump overs for 10 days, then 1-2 for the next 5 • Aged about 10 months • New, one and two-year-old French oak barrels from Taransaud • Alc.13.5%
LAELY’S NOTES I moved to Bordeaux, France before I could even legally drink in the USA. I was 19 or 20. I knew hardly anything about wine before then, but once there, I made up for lost time. I “cut my teeth” on French wine, and feel incredibly lucky to have had that experience. For me, Cabernet Sauvignon is a balancing act, with the fruit, tannins, alcohol and freshness in harmony. This is not a “big, huge” wine...my goal is always elegance and balance, respecting the varietal for what it truly brings to the table. Pun intended.
