Ca' Del Monte Description
Ca’ del Monte – Ripasso Valpolicella Classico Superiore is a red wine from the Veneto region of Italy. It is made by re-fermenting Valpolicella Classico wine on the skins of Amarone, a richer and more complex wine from the same area. This process, called ripasso, gives the wine more body, color, aroma, and flavor. Ca’ del Monte is a family-owned winery located on the hillsides of Negrar, in the heart of Valpolicella. The wine has a ruby red color with garnet reflections, and a bouquet of red berries, black cherries, herbs, flowers, and almonds. It is full-bodied, smooth, and balanced on the palate, with a long and spicy finish. It pairs well with roasted meats, game, cheese, and pasta dishes.
